Umm Ali

Umm Ali .... the name itself is so interesting!
 
An Egyptian version of bread pudding served during special occasions. Legend has it that Umm Ali is named after Sultan Ezz El Din Aybak’s wife, back in the 13th century. She made it for a victory celebration, and distributed it among the people of the land.  Her name stuck to this tasty dish ever since. Hope you all will try this simple dessert for Eid and enjoy with family.

Mackerel in thick coconut gravy (Naadan Ayla curry)

 



A tangy south Indian fish curry which  goes well with brown rice. The coconut gravy with a very creamy texture and the gambooge (kudampuli) sweet and sour taste gives a perfect balance to this dish. Any fleshy fish can be used to make this curry. I chose mackerel as this blends all flavours well.

Cinnamon dusted French Toast


French toast was not invented in France. In fact, French toast was around long before France even existed! The earliest reference dates back to 4th century Rome. The Romans would take stale bread (as highly enriched white bread was very expensive back then), soak it in a milk and egg mixture, then cook it by frying it in oil or butter.

This recipe is very simple and easy. We call it the "Bombay toast", but in gourmet lingo - the French toast.

Green peas masala




A simple and quick accompaniment to bread or rice, this curry is a always a last minute decision when I run out of veggies. I use frozen peas in this recipe as it is always stocked in my freezer, though I recommend using fresh peas whenever possible as that does takes this curry to a whole new level.

When purchasing fresh garden peas, look for ones with firm pods, which are velvety and smooth. The color should be a lively green. Those whose green color is especially light or dark, or those that are yellow, whitish or speckled with gray, can be avoided.
