Aripayasam ( Jaggery and rice pudding )

 
 
 
Today is Chingam 1st. Malayalam new year, an auspicious month for all Keralites around the world. Onam falls in this month which is the harvest festival. So lets begin this month with something sweet and simple. Many versions of this payasam is made in almost all temples as offering to God.
 
Ingredients
  • 1 cup broken matta rice or brown rice
  • 3/4 kg jaggery melted and strained
  • 4 tbsp ghee
  • 1cup grated coconut
  • 7-8 cardamom' s crushed
  • Nuts, raisins, coconut pieces for garnish
Wash rice and drain it. In a pressure cooker add 1 tbsp ghee and roast washed rice for 2-3 minutes . Add 1 3/4 cup water and cook till you hear 4-6 whistles. Open the cooker and check whether the rice is cooked properly .In a microwave proof bowl melt jaggery with 1/4 cup water . This will take 4-5 minutes. Strain this and pour it in the cooker with rice and cook till it becomes thick . Add grated coconut , 2 tbsp ghee and cardamom powder. Fry nuts, raisins and coconut pieces in ghee and garnish .
 


 
Do Note
 
According to your taste you can increase the amount of jaggery for  more sweetness and color.
 
If brown rice is not available basmati or plain white rice can be used which you can cook in an open pot .
