Easy one bowl banana bread

Recipe source - Joy of Baking

This is an easy one bowl cake made from very ripe (black spotted) bananas which are considered useless. Apart from that it's a very healthy recipe, which everyone can enjoy.

No fancy appliances are needed to make this banana bread, just two bowls and a whisk. Simple as that!

Ingredients
  • All purpose flour                 - 1 cup
  • Whole wheat flour or atta   - 1/2cup
  • Over ripe bananas               - 3 medium size
  • Low fat yoghurt                  - 1/2 cup
  • Oil                                     - 1/4 cup
  • Sugar                                 - 1/2 cup
  • Eggs                                   - 2
  • Baking powder                    - 1tsp
  • Baking soda                        - 1tsp
  • Cinnamon powder               - 1tsp
  • Vanilla essence                   - 1tsp
  • Salt                                    - 1 pinch

Mash bananas using a fork. Add yoghurt  and baking soda to this and let it sit for one minute. In the meantime mix the dry ingredients in a bowl and keep aside. Now add oil, sugar and egg to the banana mixture and whisk until everything is mixed well. Add the dry ingredients little by little to this mixture and fold gently until you get a smooth batter. This will take only 2-3 minutes. Finally add vanilla essence. Pour this into a pan which has to be brushed with oil and dusted with flour. Bake for 40-45 minutes at 180 degrees Celsius.

    Do note:
  • Ripe bananas with black spots should be used for this bread.
  • Cooking time depends on your oven temperature and the pan used. Adjust accordingly.
