Butter Chicken

This is a common entrée we all order when we go out to eat Indian food. A well balanced dish which is spicy, tangy and creamy. So I think this butter chicken recipe is worth a try at home also.

Ingredients

  • 400gms boneless chicken cubes
  • 1cup thick tomato puree( 3-4 medium tomatoes )
  • 1tbsp ginger garlic paste
  • 1 tsp garam masla
  • 2 tsp Kashmiri chilli powder
  • 1 handful cashew nuts soaked in hot water
  • 1 tsp lime juice
  • 1/4 tsp turmeric powder
  • 1/4 cup coriander leaves chopped
  • 1 tsp kasuri methi (dry fenugreek leaves)
  • 3 tbsp fresh cream
  • 3/4, tsp sugar
  • 4-5 tbsp butter
Marinate chicken pieces in limejuice,1 tsp chilli powder, 1/2 tbsp ginger garlic paste salt for 15-20 min. Grill this or shallow fry in a pan .In a thick bottom pan melt butter add ginger garlic paste ,tomato puree, chilli powder and garam masala. Let  this simmer for ten minutes in low flame or till you see oil on top of the gravy . At this stage add chicken piceses and cashew nut paste .Mix this well and after 5 min add sugar and kasuri methi ,cream and switch off the flame. Garnish with coriander leaves and ginger juliennes. Serve hot with nan or rice.
