Falooda

A classic Indian sundae served in summers. There are different recipes for falooda. Here I follow a simple one which tastes and looks great. 
 
 
 
Ingredients
 
Basil or falooda seeds - 1 tbsp which has to be soaked in water for 10 mins.
 
Custard
  • 2 cups milk
  • 1 tbsp custard powder dissolved in 2 tbsp water
  • 4tbsp sugar
  • 1/2 tsp rose essence
  • 3 cardamom crushed
Vermicelli  
  • 1/4 cup vermicelli
  • 1tsp ghee
  • 2 cup milk
  • 3tbsp sugar
Jelly
  • 1 packet flavored gelatin, preferably strawberry
  • 1 cup of chopped fruits of your choice
 
For custard, boil milk and slowly add the dissolved custard powder stirring continuously so that no lumps are formed, till custard thickens. Switch off the flame and add sugar, cardamom and rose essence. Once this cools, chill it. Roast vermicelli in ghee for one min and cook this in milk for 5 min.s with sugar. Set the jelly according to the instructions in the packet. Chop some seasonal fresh fruits of your choice. In this recipe mango, strawberry, banana and apple are used. All these ingredients should be chilled well before serving. Now take a tall glass and add 1 tbsp jelly followed by a layer of vermicelli, custard, then fruit.  Finally top it up with the soaked falooda seeds.
 
 
 
 
 
Do Note
Custard layer can be replaced by ice cream
