Ghee Rice





Hot, light and fluffy rice, infused with whole spices and clarified butter.



Ingredients

  • 2 cups cooked basmati rice
  • 4 cloves
  • 4 cardamom pods lightly crushed with the back of a knife
  • 1 cinnamon stick
  • 1/2 teaspoon fennel seeds
  • 1 medium onion sliced finely
  • 3 tablespoons clarified butter (ghee)
  • Fried cashew nuts, raisins and fresh coriander for garnish
  • Salt to taste

In a pan heat ghee (clarified butter) and add the whole spices. Cook in medium flame. Sauté the onions till they become golden brown.  Add the cooked rice and mix gently.  Fluff up the rice with a fork. Fry the raisins in ghee till plump then remove. Fry Cashew nuts in the same oil till golden brown then remove. Serve the rice on a platter and garnish with the fried ingredients and fresh coriander as desired. Serve hot with your favorite curry.
