Ingredients
- 2 cup mix vegetables (Yam, carrots, raw banana, pumpkin) cubed
- 1/2 cup black channa boiled
- coconut 1cup plus 2 tbsp. for tempering
- 3-4 small onions
- 1/2 tsp cumin (jeerakam)
- 1/2 tsp chilli powder
- 1/2 tsp turmeric powder
- 3 green chilllies
- 1/2 tsp mustard
- 2-3 dry chilies
- curry leaves
- 2 tbsp. coconut oil
Cook vegetables in little water with 1/2 tsp chili powder and 1/4 tsp turmeric powder. Grind coarsely coconut, chilies, onions, cumin and 1/4 tsp turmeric powder. Add this to boiled vegetables along with cooked channa .Mix well .You can add little water if u want a gravy consistency at this stage. Heat oil in a pan add mustard, dry chilies, coconut and curry leaves. Sautee till the coconut becomes brown. Pour this over the curry and add crushed curry leaves.
