A Malabar delicacy which is healthy and tasty . This is also called meen pathiri ,as these are steamed rice cakes filled with spicy fish filling. An ideal snack to break the fast during Ramadan.
Ingredients
- 1 cup rice flour
- 1/2 tsp cumin seeds
- 2 tbsp ghee
- 1/2 tsp salt
- 1 1/2 cup boiling hot water
- 1 cup boiled fish flakes(any fleshy fish )
- 2 tsp ginger and garlic finely chopped
- 2 green chillies finely chopped
- 1 big onion chopped
- 1 tomato chopped
- 1 1/2 tsp chilli powder
- 1/2 tsp turmeric powder
- 1 cup coconut
- 1/2 tsp fennel seeds (perumjeerakam)
- curry leaves
- 2 tbsp oil
Mix cumin seeds, salt, rice flour in a bowl and add boiling hot water along with 1 tbsp ghee. Mix gently with a wooden spatula and once the dough is cooled enough to handle knead well with your hand until it is soft. If the rice dough is sticky rub your hand with some ghee and knead . Cover this with a wet towel and keep it aside. For the filling boil fish pieces with 1/2 tsp chilli, turmeric and little salt. Remove the bones . An easy alternative is canned fish ,in this recipe canned tuna is used which need not be boiled and can be used directly. Heat a pan add oil sautee ginger ,garlic ,onion, green chillies, curry leaves and tomato . To this add 1 tsp chilli powder and fish flakes , sautee for 5 min till the filling is dry. Grind coconut and fennel seeds and add this to the fish filling ,mix well and switch off the flame. Rub your hands with ghee , take lemon sized rice dough shape it in the size of small pancakes. Gently place 1 tbsp filling in one side and seal the other side with your hand. The outer covering should not be very thick. In a steamer cook this for 20 -25 min and serve hot.
