Vada Stew (Urad dal dumpling curry)

 
 
 A Travancore masterpiece item in sadya. Tiny vada 's soaked in rich and  spicy coconut stew gravy makes this curry the show stopper in vishu sadya. Wishing you all a happy and prosperous Vishu.

Ingredients

Vada
  • 3/4 cup Urad dal (uzhunnu) soaked for 3-4 hrs
  • 3 Small onions chopped
  • 1/4 tsp pepper crushed
  • 1 tsp semolina (rava)
  • curry leaves
  • salt
Stew
  • 2 potatoes peeled and cubed
  • 2 onions
  • 1 tsp mustard
  • 3 dry chilies
  • 3 tbsp. oil
  • 1 tsp ginger chopped
  • 2 green chilies chopped
  • 1/2 tsp chilli powder
  • 1 tsp coriander powder
  • 11/2 tsp garam masala powder
  • 1/4 tsp turmeric powder
  • 1 cup thin coconut milk plus 1 cup thick coconut milk
  • curry leaves
  • salt
In a blender make a thick batter of soaked dal . Add all the other ingredients and mix well . Heat oil in a pan and gently drop one tsp. of batter in hot oil and deep fry until it is golden brown. Now for  stew, in a pan add oil,  mustard, curry leaves and dry chilies. Once the mustard stop sputtering add onion, potato, greenchillies, ginger and all the dry powders. Sauté this for 2 min and add thin coconut milk . In medium flame cook the potatoes in coconut milk for about ten minutes. When the potatoes are cooked properly add the thick coconut milk along with vadas .Give it a nice stir and garnish with curry leaves.

Do Note

The batter of urad dal should be made with very less water .
Almost 20 small vadas can be made from this recipe ,no need to put all that in stew .10 -12 vadas is ideal for this recipe.
