Hot Cross Buns


 
 
Hot cross buns for Good Friday! These are soft buttery buns loaded with dry fruits and mixed spices. Perfect recipe for a special breakfast. 

 Ingredients
  • 4 cups plain white flour
  • 1 cup milk
  • 1 egg plus one more for egg wash
  • 5 tbsp melted butter
  • 2 tsp yeast
  • 1/2 cup sugar
  • 1/2 cup black raisins and tutti fruit
  • 3 cardamom,1 small stick cinnamon, small piece of nut meg ,2 cloves
  • 1/2 tsp salt
  • 4 tbsp. icing sugar for glaze

Mix yeast and 1 tsp. sugar in lukewarm milk and keep this aside for 10 min until the milk becomes frothy. Dry roast the whole spices and grind this to a fine powder. Mix  spice powder, flour, dry fruits and salt. To the yeast mixture add melted butter, egg, sugar and beat well. Knead the flour with this  till a soft  dough is formed. Cover and let it rest for 1 hour in a warm place. After one hour the dough will double. Again gently knead this and divide into equal sizes and roll the dough in the shape of buns. With the sharp end of a knife mark a cross in the middle of each bun. Let this also rest for another half an hour and brush the buns with beaten egg and bake for 20 min in 180 C  until its golden brown. In a bowl mix icing sugar with 1 tbsp. of milk and make a smooth glaze and decorate the buns with this glaze.
