A wholesome breakfast packed with fibre , protein and carbohydrates. These are perfect for kids as well as grown ups. Just top it with your favourite fruit, honey, butter or just a dollop of cream.
Ingredients
1/2cup all purpose flour
1/2 cup oats
1/2 cup whole wheat flour
2 cups carrot grated
2 eggs
1/2 cup brown sugar
2 cloves,2 pods cardamom 1 small stick of cinnamon
1/2cup yoghurt
1cup milk
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 tbsp refined oil
whipping cream (optional)
Butter
Beat eggs, yoghurt and oil along with baking soda. Dry roast the spices for one minute and grind it into a fine powder. Mix all the dry ingredients . Oats should be ground to a fine powder. Add the egg mixture to the dry ingredients and slowly fold without forming lumps. Finally add the grated carrots and milk to form a thick batter. Smear some butter in a hot pan and cook the pancakes until golden brown. Serve warm with honey, maple syrup or whipped cream.
