Vegetable Kurma




A mix vegetable curry in coconut cashew paste. Best served with pulav ,roti or nan.

Ingredients
  • 1 1/2 cup mix vegetables (carrot ,cauliflower, potato, beans, peas) cubed
  • 1 big onion chopped
  • 1 tomato chopped
  • 2 green chilies
  • 1 tsp each ginger garlic paste
  • 1 tsp Kashmiri chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1cup grated coconut
  • 7-8 cashew nuts soaked in hot water
  • 3 tb sp oil
  • curry leaves and coriander leaves
  • salt
Grind separately cashew nuts and coconut . Make a fine paste . In a pan add oil and sauté onion with ginger garlic paste till the onions become brown. Add chopped tomatoes along with spices and cubed vegetables. Sautee till the rawness of the spices is gone (around 5-6 minutes). Add one cup of water and cook the vegetables. To this add cashew and coconut paste and let it simmer for 2 minutes. Garnish with coriander leaves and serve hot.





Do Note

Some people prefer yellow colored  Kurma so in that case just use only green chilies. 4-5 green chilies will be enough or adjust according to your spice level .

Instead of cashew paste, cream can be used (2-3 tbsp.)

If you prefer little sourness in your curry, 1 tbsp thick curd can be  added just before switching off the flame.
