Choco Vanilla Cup Cakes

 
An easy basic recipe for vanilla cupcakes. This recipe can also be used for making a 8 inch cake. Around 20 cupcakes can be made from this.

 

Ingredients
  • 2 cups all purpose flour(maida)
  • 3/4 cup butter (150 gms) softened
  • 4 eggs
  • 1 1/2 cup sugar
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoon vanilla essence
Frosting
  • 250 ml whipping cream
  • 2 tablespoon cocoa powder
  • 4 tablespoon sugar
  • 1/2 teaspoon instant coffee powder
  • 2 tablespoon milk
 
 Using a hand mixer or whisk, beat butter and sugar well. Add eggs one by one to the butter sugar mixture and beat it until it's soft and creamy. In a  bowl mix flour, baking powder and salt. Use a whisk and mix properly so that the baking powder gets evenly distributed in the flour. Now add these dry ingredients little by little to the butter sugar mixture along with 1 cup milk. Fold until all lumps are gone and a smooth batter is formed. Gently pour 1 tablespoon batter in to each cupcake molds. Bake for 15 to 20 minutes at 180 C. For the frosting, mix cocoa and coffee powder in 2 tablespoon lukewarm milk and make a smooth paste. Add this to the whipping cream with sugar and beat till soft peaks are formed. Pipe this on top of the cupcakes.
