Egg coconut curry (Mutta aviyal)

 
A typical travancore style egg curry served with brown rice or white rice. This is a healthy wholesome curry which can complete your meal.Aviyal is a famous mix veg curry in Kerala. In this recipe egg is cooked in aviyal gravy along with some vegetables.

Ingredients

  • 4 boiled eggs
  • 1 cup coconut grated
  • 1 drumstick peeled and cut into pieces
  • 1 big tomato chopped
  • 1 medium potato chopped
  • 1/2 cup small onions
  • 4 -5 greenchillies
  • 1/4 teaspoon cumin
  • 1/2 teaspoon turmeric powder
  • 2 tablespoon coconut oil
  • Curry leaves 
Heat 1 tbsp oil in a pan, add chopped potato,greenchillies, drumstick,small onions ,tomato and curry leaves with 1/2 cup water and let it cook. Make a fine paste of coconut, cumin and turmeric powder. Cut the boiled eggs and add this along with coconut paste to cooked veggies . This curry has a thick gravy consistancy so water can be added during this stage.Let this simmer for 5 minutes till the flavours are blended with egg. Mutta aviyal is ready . Switch off the flame and add 1 tbsp coconut oil and crushed curry leaves and gently mix . Cover it with a lid to seal the aroma of coconut oil and curry leaves. Serve warm with brown rice .
 

Do Note
 The number of green chilles can be increased or decreased according to your taste.
