No bake lime cheesecake

 
Celebrate Women's day with something sweet and simple. A basic cheese cake recipe with simple ingredients which is readily available in your kitchen.

Ingredients

  • 200gm paneer 
  • 200ml fresh cream or whipping cream
  • 1/2 cup condensed milk
  • 3/4 cup milk
  • 1 tbsp unflavoured gelatin
  • 1/2 cup curd
  • 1 tbsp lime juice
  • Zest of one lemon grated
  • 4 tbsp sugar
  • 8 digestive biscuits crushed
  • 50 gm butter
  • Lime flavoured jelly powder
Take 1/4 cup water and add 1 tbsp gelatin .Microwave this for 30 sec or until the gelatin is dissolved properly. Keep this aside and let it cool to become room temperature. Crush the biscuits to a fine powder and add melted butter to this. Press this mixture firmly to a spring form baking pan or to a bowl.Keep this in refrigerator for 30 minutes.In a blender add  paneer cubes with milk and blend it to a fine paste with no grains.This helps to get a smooth texture for the cheesecake. To this mixture add whipped cream, curd, gelatin ,condensed milk and sugar. Finally add lime juice and zest of lemon.  Mix well.  Pour this mixture on top of the biscuit layer. Set this in the refrigerator for 4- 5 hours  . Prepare the jelly according to the instructions in the packet and keep the jelly in the refrigerator for one hour to make it semi set but not firm. Pour this jelly carefully on top of the cheesecake and refrigerate until the jelly is firm. 
 


Do Note
 
  • This cheesecake will have a slight grainy texture because of paneer. If u like a very smooth cheesecake paneer can be replaced with cream cheese 200gm .
  • Always make sure that the dissolved gelatin should be room temp while adding .Dont add hot gelatine to the cheesecake mixture.
  • Any flavour jelly can be used or fruit crush like strawberry or blue berry can be used as the topping.
  • A 6 inch spring form pan can be used for this recipe or use a medium size bowl to get a tall cheesecake.
